To sit here one year later in front of my tiny Poke bar 25 steps from the beach on a beautiful Monday morning, Wow I must be the richest woman alive. It has not been easy and that suites me just fine, easy is not my cup of tea.
To say I have a lot to celebrate is an understatement. I survived a relocation from Denmark to Spain, my first year in business, a complete lockdown, 4 kids not going to school for 6 months, and now dealing with COVID but I am where, I feel at peace, in a sleepy little beach town of Torregaudiaro.
